Observation (CORRECTED DURING INSPECTION): Two violations:
1) Pizza does found not to be at temperatures of 60 degrees Celsius. Items are not individually portioned and stored in such a way that they are above heat source and not in direct contact with heat source.
2) Food items in rotating hot holding unit found at internal temperatures of 38 degrees Celsius.
CORRECTED DURING INSPECTION - items reheated as hot holding unit was turned to maximum temperature

Corrective Action(s): 1) Pizza is discarded after one hour. EHO to review Food Safety plan with respect to this item.
2) Ensure all hot held items are maintained at 60 degrees Celsius unless specified in Food Safety plan. Use stem thermometer found on site to check temperatures.

Corrective Action(s): 1) Ensure all items are covered when stored in walk-in cooler unit.
2) QUAT based sanitizer solution is to be checked daily and confirmed that 200ppm QUAT is achieved. Current dispensing is too high. Discuss with technician. 200ppm QUAT EXACTLY.

- Common use items washed and sanitized frequently every 2-4 hours or more frequently as necessary - discussion with Manager regarding pizza slicer
- Light covers in place
- Cooler handles and seals in good sanitary condition
- Staff Personal items kept separate from kitchen equipment
- FOODSAFE level on or equivalent Certified staff present during inspection


NOTE: Facility is utilizing the "Too Good To Go" app for sandwiches and pastry items. Items found bagged in walk -in cooler unit one day past "best before" date. EHO to confirm that Corporate Food Safety plan has been updated with necessary changes.
