Observation (CORRECTED DURING INSPECTION): Equipment and utensils were not being sanitized after washing and rinsing.
Corrective Action(s): For manual warewashing in your two-compartment sink, ensure to follow these steps:
1) Wash equipment/utensils with hot, soapy water in the first sink, then drain the sink
2) Rinse with clean hot water in the same first sink
3) Fill the second sink with sanitizer solution (Mikro-Quat) and sanitize all equipment/utensils by completely submerging in sanitizer solution for at least 30 seconds.
4) Air-dry.

Instructions were reviewed with staff at time of inspection.

- Hand washing sink properly supplied with hot and cold running water, liquid soap, and paper towels
- Two-compartment sink available for manual warewashing. **Reviewed manual warewashing procedures with staff - see violation code 302 above.
- Quat sanitizer available at 200 ppm from dispenser and in spray bottle
- Hot-dogs hot-held at above 60C.
- Sandwich prep cooler, undercounter cooler, and walk-in cooler measured at 4C or colder.
- Undercounter freezer measured at -18C or colder
- Temperature records well-maintained
- Food storage practices satisfactory
- General sanitation satisfactory at time of inspection
- Pest control in place. No signs of pest activity noted at time of inspection.
