Observation: Dishwasher has been replaced with a new commercial dishwasher.
Racks are not supplied for this dishwasher and it cannot be used.
Racks have been ordered.
Corrective Action(s): Ensure the dishwasher is supplied with the appropriate racks and equipment for use.
Continue to use 2 compartment sink method with your Quat sanitizer.
Items that cannot fit the sink or the dishwasher (e.g. large bowls, large pans) and other equipment not intended to be submerged should follow the appropriate clean in place procedure discussed using your Quat sanitizer.

Observation: Drain near clean out of 2 compartment sink is leaking water.
It has been temporarily patched. Some water is on the floor adjacent.
Stain evident inside cabinet where the drain is installed. Cabinet is raw wood.
Dishwasher is also connected to this drain.
Corrective Action(s): Ensure that drain is checked for leaks and properly fixed.
Ensure this cabinet and the floor adjacent is cleaned and sanitized.
Dry, paint and seal cabinet and monitor area for mold growth.

Comments

Food Handler Hygiene
o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
o Operators had clean clothing for food preparation

Storage Temperatures
o Cold holding Coolers are below 4C; Cold holding Freezers are below -18C
-Hot holding: items are cooked and placed in hot holding unit. Service time is 30-45min during lunch.

Food Processing and Food Protection
o Cooking - Temperatures are being monitored with probe thermometers
-Operator aware of temperatures and cooking times for proteins such as burgers
-Select items that require more preparation are made at Canuel Caters (e.g. lasagna)
o No leftovers are kept or re-served.
o Food Storage - Food is stored in covered containers. Frozen items stored in bags

Maintenance and Sanitation
o 2 Compartment Sink is fully supplied 200ppm Quats for sanitizing (400ppm)
o Sanitizer bottles/buckets - have 200ppm Quats
o Storage of chemicals is separate and away from food
o Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
o Pest control - there are no signs of pests at the time of inspection.
