Comments

Hand wash stations equipped with liquid soap and paper towels.
Quats sanitizer measured 200 ppm in spray bottles.
Chlorine sanitizer in buckets measured 100 ppm.
Dishwasher had chlorine residual of >50 ppm.
Temperature checks:
-Walk-in coolers was at 4 deg C or colder.
-Line coolers were at 3-4 deg C.
-Freezers were at -18 deg C..
-Hot holding for nuggets, chicken, etc. was 60 - 65 deg C.
Temperature log was available and up to date.
Pest control monitoring in place - contract with pest control company.
Walls in the extended storage area has been painted with light colour.
Floor seals is starting to peel and will require re-sealing later as part of regular maintenance of facility.
General sanitation was good; however, ensure to get to the hard to reach areas underneath equipment and counters.
