Observation (CORRECTED DURING INSPECTION): Pulled pork and crab dip internal temperatures were between 38-40C.
Cook said they were hot held during lunch service and then temperature was turned down, about 2 hours holding.
Cook reheated to 74C during the inspection, turned up hot holding. Thank you.
Corrective Action(s): Please ensure that temperature is monitored during lunch service and hot held at 60C throughout lunch. If temperatures are below 60C for more than 2hrs, food needs to be discarded.

Observation: No paper towel dispensers at hand washing stations. Towel hanging off rail being reused. Operator supplied some paper towels afterwards.

Comments

Hand wash station has paper towel, soap and running water. Paper towels are not stored in a dispenser.
Please ensure paper towels are in a dispenser to avoid contamination and to encourage employees wash hands as frequently as necessary.
