Observation (CORRECTED DURING INSPECTION): An empty plastic storage container with a lid was obstructing the entire sink basin at the central designated hand washing station. This hand washing station was noted as being obstructed on the previous routine inspection report.
Corrective Action(s): Plastic container and lid removed from hand washing station and placed into dishwasher. Ensure that at all times, all hand washing stations are unobstructed as they are designated for hand washing only. Ensure that all staff are aware of this requirement. This is a repeat violation. Future repeat violation(s) may lead to further enforcement action.

Follow up to Rpt # MBEK-B3UTQV.

- Wiping cloths stored in bleach water sanitizer at 200 ppm chlorine
- Foods noted on the previous inspection report as being stored in metal cans are now being stored in appropriate reusable food grade containers. Exception: Few sauces were still observed in original cans (opened). Sauces were transferred to clean, reusable food grade containers.
- Ice scoop is stored outside of bin in a clean container
- A purpose-designed scoop has been obtained for dry product and is being stored in a sanitary manner outside of product. Note: One small plastic bowl was observed in one of the dry storage bins. Removed at time of inspection. Ensure that all staff are informed that bowls are not to be stored within dry storage bins.
- Discussed temperature control of soup. Operator stated that soup will be hot held instead of cooling. It was stated by the operator that soup is hot held continuously and remainder is discarded at the end of the day. Hot holding internal temperature for soup was measured at greater than 60 degrees C at time of inspection.
- Few large volume cooled items observed in cooler were measured at an internal temperature of 3 to 5 degrees C.
- No items were observed to be thawing at ambient temperature.
- Temperature records on site are to September 4, 2018. Ensure that temperature records are kept up to date.
- Operator has misplaced permit. A permit replacement form is to be mailed to operator.
