Main kitchen:
General sanitation is good.
All handwashing stations supplied with hot/cold running water, soap, and paper towels.
All coolers (walk in, upright) at < or = 4 C.
Freezer (walk in) at -20 C.
All cold units are equipped with working thermometers.
Daily temperature logs available and kept up to date. No issues with temperature readings.
Note: Hot holding units (carts, steamers) not in use at the time of the inspection. Ensure that the temperature maintains > or = 60 C.
Low temperature dishwasher achieved 64.6 C at the plate's level during the final rinse cycle; and the dishwasher at 100 ppm of Chlorine solution.
Surface sanitizer available in designated red buckets with presoaked wiping cloths at 200 ppm Quat solution.
Dry storage area has sufficient space and racks. It is well organized. All food stored off the floor.
Dry food items (the kitchen) stored in carts with tight fitting lids.
No signs of pest activity at the time of the inspection.
Fan hood - satisfactory (Due day for cleaning: March 15, 2020).
All equipment and utensils stored in a sanitary manner at the time of inspection.
