203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Fried rice is stored in big plastic food grade container which have an internal temperature of 42 deg. C. Staff informed they placed the rice in the ice bath after cooking, then they put the rice into the cooler 5 minutes ago. Rice was cooked 1.5 hours ago.
Corrective Action(s): Correction: Transferred rice into three smaller shallow metal containers in the room temperature to cool down, followed by transferring back to the cooler to reach and maintain 4 deg. C or less. Ensure for proper cooling procedure, solid food like rice are to be placed in shallow metal container to cool down from 60 deg. C - 20 deg. C in 2 hours and then put into cooler to cool down from 20 deg. C - 4 deg. C in another 4 hours.

Observation (CORRECTED DURING INSPECTION): Found wiping cloths left on the food contact surface in the food prepping area.
Corrective Action(s): Correction: Place the wiping cloths back to the sanitizer bucket. Ensure wiping cloths are stored in the sanitizer bucket with bleach solution inside at 100 ppm.

Observation: Found mice droppings in the hot water tank room, along the corner of dishwashing area, on the floor of electric panel room and at the corner of the bar area. Found ants on the food prepping table.
Corrective Action(s): Correction: Clean up the mentioned area, remove mice droppings followed by cleaning and sanitizing by using bleach solution (1:10 ratio).

Observation: Found a hole near the hot water tank; the wall under dishwashing area is cracked for plumbing purpose.
Corrective Action(s): Correction: Fill the hole or add screen for the mentioned area to prevent rodents from coming in.
