Routine Inspection Walk-in cooler at 4 C or below. Walk-in freezer at -18 C or below. 4 door cooler at 4 C or below. Cake cooler in retail area at 4 C or below. Bunker freezer in retail area -14 C. Hand washing sinks equipped with hot/cold running water, liquid soap and single use towels. Note, the water drains a bit slow at the hand sink closest to the entrance - please look into this. Bulk buns - ensure the lids for the bins are in good condition. In the process of replacing Italian buns bin. Quats registered at 200 ppm in sanitizer spray bottles and from the dispenser located at the 3 compartment sink. High temperature dishwasher registered at 71 C on the plate surface during the final rinse cycle - verified with thermolabels. Pest control services are in place. Improvement noticed in rodent control - good. Gap between the 4 door cooler and dough proofers has been sealed - good.
