Comments

Kitchen:
-Walk-in cooler was at 3C.
-Prep cooler was at 4C (top and bottom).
-Under counter cooler was at 4C.
-Kitchen upright cooler was at 4C.
-Storage area upright cooler used for thawing frozen meats was at 2C.
-Kitchen freezer was at -15C.
-Hot holding was greater than 60C. Foods were reheated/cooked to greater than 74C prior to hot holding.
-Sprouts stored in ice/water mixture. Ice is added as it melts.
-Manager stated marinated tea eggs are portioned into smaller containers and cooled in the walk-in cooler.
-Chemical dishwasher had a final rinse of 100ppm chlorine on the dish surface (minimum of 50ppm required for sanitizing). Test strips available on-site. Staff are testing the dishwasher daily to verify the chemical concentration.
-Handwash stations accessible and supplied with hot and cold running water, and liquid hand soap.
-Bleach sanitizer spray bottle was labelled and tested at 100ppm.
-Mandolin slicer was disassembled for cleaning and sanitizing. Mandolin was found to be in good sanitary condition.
-Rice scoop stored in ice/water mixture and ice added as needed.
-Ice machine was found to be clean and sanitary. Ice scoop stored in a sanitary manner.
-General food storage practices good at the time of inspection. Foods stored off the ground and covered. Raw meats were found stored separately from ready-to-eat foods.
-Kitchen sanitation was good at the time of inspection.

Bubble Tea area:
-Under counter cooler was at 4C.
-Upright freezer was at -13C.
-Ice scoops stored in a sanitary manner.
-Handwash stations accessible and supplied with hot and cold running water, and liquid hand soap.
-Bleach sanitizer solution was at 200ppm.
-Blender containers/shakers sanitized after 2 hours of continuous use.

General:
-Facility serviced by professional pest control operator (every two weeks).
-A few rodent droppings noted at the time of inspection. Pest issues have improved significantly
-FOODSAFE Level 1 valid until April 5. 2029

*Floors in the kitchen are scheduled to be repaired. Ensure surfaces are smooth, non-absorbent, easily cleanable, and non-slip.
