Observation (CORRECTED DURING INSPECTION): Disposable paper cup uesd as scoop for dry ingredients (orzo) and stored directly in the ingredients.
Corrective Action(s): Use proper reusable scoops with handles and do not score scoops directly in dry ingredients, as the handles can contaminate the ingredients. Wash and sanitize scoops after each use.

Note: Kitchen was not in operation at time of inspection.

- Hand sink supplied with hot water, liquid soap, and paper towels
- Quat sanitizer available at 200 ppm from dispenser
- Walk-in cooler was at 2C
- Walk-in freezer and chest freezer were both below -18C
- Food storage practices good - all food covered
- General sanitation satisfactory
- Reminder not to keep doors open unless there is a screen to prevent entry of pests.
- No signs of pest activity noted at time of inspection
**Replace old sticky traps, as they have become covered in dust and debris.
