302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Observation #1 - Chemical glasswasher has 0ppm of chlorine upon the final rinse cycle. 50ppm of chlorine residual is required to effectively sanitize glassware and remove disease-causing pathogens.
Correction: Operator manually increased the concentration of chlorine. Tested again and 50ppm residual was achieved upon the final rinse cycle. Test the galsswasher concentration routinely and record results.

Observation #2 - QUATS santizer spray bottles had between 50-100ppm of QUATS. 200ppm is required to sanitize food contact surfaces.
Correction: Empty all bottles of QUATS santizer and refill wiht new solution (manually mix until the dispenser is fixed). Replace solution regularly to ensure that 200ppm w maintained.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Observation #1 - Quats automatic dispenser was not dispensing the required concentration of QUATS sanitizer. The dispenser must dispense 200ppm to correctly sanitize food contact surfaces.
Correction: Call maintenance to adjust concentration of QUATS at the dispenser. Do not use the dispenser until it is fixed. Manually mix up the required concentration of 200ppm until dispenser is repaired. Test the concentration at the dispenser daily and record results.

Observation #2 - Flour bin lid had a chunk missing from it (chipped). This is unsafe and unsanitary as pieces of plastic could fall in food and the damaged items cannot be cleaned properly.
Correction: Discard broken lid and purchase a new one. Conduct regular inspections of such items (chipped, cracked or otherwise damaged) to remove them.

General comments::
- All freezers were at adequate temperatures
- All coolers were at </=4C; thermometers present
- All hot holding was >/=60C
- All handsinks had liquid soap, paper towel present.
- Foods were stored labelled, covered, and 6" off the ground + in like groups
- No signs of pests observed; general sanitation is satisfactory
- High temp dishwasher reached 71.4C at the plate level upon final rinse cycle.
- FOODSAFE certified staff present
- Ice machine was clean, free of mold/rust
- Exhaust fume hood was clean; servicing due this July 2018
- pest control comes 1X/month.
