Observation: - Bulk bin for rice left uncovered in the storage area.
- Single use containers and bowls used to scoop food in bulk storage bins
- All-purpose flour bulk pack was left open
Corrective Action(s): - Cover all bulk storage bin with well-fitting lids
- Use scoops with handles and store scoops in a way that handles doesn't touch food. Alternatively, you can leave containers outside the containers.
- Transfer the contents from the bags and bulk packs once opened to a food grade container

Comments

Following observations were made during the routine observation:
- All handsinks are supplied with hot and cold running water, soap and paper towel.
- All coolers- walk-in cooler, under counter cooler and prep cooler were less than 4C. NOTE: Display cooler for drinks was at 6C, ensure that only pops are stored in the cooler and no potentially hazardous foods are stored.
- Hot holding of rice at greater than 60C
- High temperature dishwasher was measured at 76C at the during the final rinse cycle at the dish surface.
- Sanitizer solution was at 100ppm bleach
- No evidence of pest activity at the time of inspection
- Owner and one employee has Foodsafe training.
- General sanitation is satisfactory
