Observation: Operator developed a draft food safety plan and did not complete food safety plan over a year ago.
Corrective Action(s): Every operator of food premises where carcasses are handled or where food is processed or prepared must develop, maintain and follow written procedures to ensure that a health hazard does not occur in the operation of the establishment. Failure to develop a sanitation plan may result in the issuance of an Order or the violation tickets.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent (rats and mice) droppings were found throughout the facility. Facility is currently serviced by a pest control operator every two weeks. Both green and black rodent droppings observed throughout the facility.
Corrective Action(s): Facility must be serviced by a professional pest control operator to control the pest infestation. Purpose of pest control is to eliminate or control the infestation - not just replace the bait stations and change monitoring boards.

Observation: Rodent droppings were found throughout the facility.
Corrective Action(s): Clean and sanitized all affected areas using a disinfecting solution. Staff were cleaning affected areas at the time of inspection.

Observation: Facility developed a draft sanitation plan and never completed the sanitation plan over a year ago.
Corrective Action(s): Every operator of food premises where carcasses are handled or where food is processed or prepared must develop, maintain and follow written procedures to ensure the safe and sanitary operation of the establishment. Failure to develop a sanitation plan may result in the issuance of an Order or the violation tickets.

Comments

-Walk-in coolers were at 4C.
-Walk-in freezers ranged from -10C to -15C.
-Chest freezers were both at -23C.
-Front display coolers were both at 4C.
-Customer area freezer was at -10C.
-Cleaning and sanitizing carried out in 3-compartment sink. Sink plugs present.
-Quats sanitizer spray bottles properly labelled and tested at 200ppm.
-Handwash stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Meat cutters and cutting boards disinfected every 2 hours.
-Canned items in the customer area were found to be in good condition.
