Observation (CORRECTED DURING INSPECTION): Hot held cooked chicken measured with an internal food product temperature of 57C. Minimal of 60C is required to prevent growth of pathogen and/or their toxins.
Corrective Action(s): Operator discarded the cooked chicken. Increase the temperature setting to ensure a hot holding temperature of 60C or above is maintained.

Observation (CORRECTED DURING INSPECTION): Quaternary ammonium food sanitizer in pail, spray bottle and from dispenser measured at 50-100 ppm. 200-400 ppm is required to properly sanitize food contact surfaces.
Corrective Action(s): Manually mix quaternary ammonium food sanitizer from the stock bottle and verify the concentration with test strips. Clean and sanitize all food contact surfaces on site.

Observation (CORRECTED DURING INSPECTION): Food sanitizer dispenser dispensed 50 ppm quaternary ammonium sanitizer. Unable to dispenser required 200-400 ppm concentration.
Corrective Action(s): Service/fix the food sanitizer dispenser to ensure 200-400 ppm of quaternary ammonium sanitizer is dispensed. Staff able to fix the dispenser at the time of inspection.
