Observation (CORRECTED DURING INSPECTION): Broccoli soup in the larger warmer had the top 1-2 inch at 56-57'C. Deeper in the unit was above 60'C. Lid was placed at this time.
Corrective Action(s): Ensure to have the unit closed when not in use to help maintain the temperature.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1) No sanitizer available in spray bottle. No bleach bottle available on site. Owner had advised the bottle was taken home and brought it back during the time of the inspection. 100-200ppm chlorine was prepared in a spray bottle and all food prep surfaces were sanitized at this time.
2) Low temperature dishwasher not achieving minimum sanitizer level at final rinse. Sanitizer running low in the container, hence replaced at this time. >50ppm chlorine was achieved at the plate level after final rinse.
Corrective Action(s): 1) Ensure to have 100-200ppm chlorine solution available at all times during operation. All prep surfaces must be sanitized prior to initiating any food prep in the morning, after each possible contamination and every 2 hours during operation.
2) Ensure to check the sanitizer level and that the solution is properly being dispensed on a regular basis. All dishware must be rewashed through the dishwasher at this time.

Observation: Accumulation of dust and food debris observed from floors behind/underneath large equipment, as well as on the sides of the equipment.
Corrective Action(s): Ensure these areas are cleaned on a more regular basis.

Observation: Walk-in cooler operating above 4'C. Ambient air temperature at 10'C at this time. Only baked goods and uncut vegetables stored in the unit at this time. Technician already contacted.
Corrective Action(s): Ensure to repair the cooler and contact the health inspector to notify before placing potentially hazardous foods back in the unit.
