General sanitation is satisfactory. Handwashing stations (back/front/customer service) supplied with hot/cold running water, soap, and paper towels. Coolers (display, undercounter, & counter-top) at < or = to 4 C. Freezers (display, ice, ice-cream, undercounter, & bulk storage) at < or = to -18 C. Thermometers for cold units - available. Hot holding units at > or = 60 C. Insert thermometers - available. All food is covered and stored safely. Pastry cabinet kept in sanitary condition. The handles of the tongs were not touching the food items. Three compartment sink available for manual dishwashing. Sanitizer available at 200 ppm Quat solution. Test strips available to monitor the Quat concentration. Surface sanitizer available in spray bottles at 200 ppm Quat solution. Dry storage area - organized/satisfactory. No signs of pest activity.
