308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)] Observation: High temperature dishwasher registered at 62 C after first run, 71 C on the second run and 43 C on the third run on the plate surface. Dishwasher must be able to consistently achieve at least 71 C on the plate surface during the final rinse cycle. Corrective Action(s): Repair dishwasher by November 29, 2023. Failure to do so may result in a violation ticket. Once repaired, ensure dishwasher is tested each time with a maximum registering thermometer or thermolabel. Do not rely on the gauges on the dishwasher as they are faulty. Continue using the manual method for sanitizing in the interim. Violation Score: 15
