Follow up inspection conducted today. ASM notified writer by phone that maintenance guy has repaired the dishwasher with the temperature reached 85C. However, the dish level temperature measured only 60C at the time of inspection. Please continue to use 3-compartment sink to wash, rinse and sanitize bakeware. Note: the bread racks (mobile carts) in bakery department need to be cleaned.
