Most of premise is pretty clean.
Dishwasher had 100 ppm chlorine in final rinse.
Discussed cooling of brisket. Large piece of meat is portioned before cooling in fridge.
Fridges are cold ; <4 Celsius.
Hot holding is very hot; > 60 Celsius.
No sign of pests.
All hand sinks are stocked and working.
