Observation (CORRECTED DURING INSPECTION): Droppings were observed inside an open bag of rice. Potatoes placed right beside. All discarded by staff at this time.
Corrective Action(s): Do not leave any foods open anywhere in the facility. All foods must be stored in pest proof containers.

Observation: 1) Uncovered / opened bags of food observed in dry storage room.
2) Uncovered foods observed in the walk-in cooler.
Corrective Action(s): Ensure all foods are properly contained in and covered with food grade materials. All flour/sugar/rice/seeds must be transferred to pest proof container once opened.

Observation: Mouse droppings were observed on floor and on top of the storage cabinet in the dry storage room.
Corrective Action(s): Ensure all droppings are removed and treat the areas using 1000ppm chlorine (1:50).

Observation: Uncovered foods observed in the dry storage room, where droppings were monitored.
Corrective Action(s): Ensure to have all foods stored in pest proof containers.

Comments

Routine inspection conducted:

-Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating below required temperature of 4'C; Freezers operating below required temperature of -18'C.
-Thermometers available for temperature monitoring.
-100--200ppm chlorine solution available (front/kitchen) in buckets to hold wiping cloths.
-Low temperature dishwasher achieved minimum level of chlorine solution (50ppm) at the plate level after final rinse.
-Ventilation canopy hood serviced and maintained.
-Traps in place. Professional pest control company contracted for regular visits.

NOTE: Recent reports from the pest control company to be checked on the follow-up inspection day.
NOTE: Hot-holding unit at the front not in use at this time.

Follow-up inspection to be conducted on Friday, October 11, 2019. Remove all droppings from the back storage room. Have all foods contained in pest proof containers.
