Observation (CORRECTED DURING INSPECTION): 4 Containers of Beef Broth measured 4C on the surface and 7-8C internally. Operator said that the broth was made the day before. Operator stated that they cool the broth at room temperature for 4hours before putting it into the cooler.
Corrective Action(s): Operator is instructed to discard all the beef broth.
Instructed operator to cool the broth in smaller batches to facilitate faster cooling. Hot food items must be cooled to 20C in two hours at room temperature and cooled further in the cooler. Food internally must reach 4C or below after 4hours in the cooler.

Observation (CORRECTED DURING INSPECTION): Trays of chopped/cooked veggies observed to be stored at room temperature, probed at 10-11C.
3 buckets of bean sprouts in water observed stored at room temperature, probed at 10-11C.
Operator stated that they just pulled it out of the cooler within the past hour and will use it up within 2h.
Corrective Action(s): Instructed operator that all potentially hazardous food items must be stored at 4C or below. Unless time tracking can be demostrated. Instructed operator to keep bean sprouts in ice water and create time labels for the other veggies.
Potentially hazardous foods (bean sprouts, chopped veggies, cooked veggies) must be discarded after 2hours when stored at room temperature.

Observation (CORRECTED DURING INSPECTION): Meat slicer observed to still have food debris at the crevices after cleaning. Showed the operator where there is still food debris to clean.

Observation (CORRECTED DURING INSPECTION): An open bag of sugar observed to be stored on the floor. Some sugar was spilled around the bag. This will lead to attraction of pests.
Corrective Action(s): Instructed operator to not store sugar directly on the floor and clean up the spill.

**Please be on top of cleaning, food debris noted underneath shelving and kitchen equipment. There is some accumulation of grease and grime on shelving units. Please clean to prevent further build up.
