Observation (CORRECTED DURING INSPECTION): Multiple containers of food in the upright freezer, walk-in cooler (bowl of salad) and reach-in prep cooler (pickles) were stored uncovered in the refrigeration units.

Corrective Action(s): Use plastic wrap or lids to cover all unprotected food in all refrigeration units.

Observation: 1. Dried on debris noted on the floor in the walk-in cooler.
2. Grease buildup on the floor below the cooking equipment.
3. Black and pink residue buildup noted on the dish sink sprayer head.

Corrective Action(s): Wash, rinse and sanitze all the abovementioned areas and maintained these areas in a sanitary condition at all time.

309 - Chemicals, cleansers, & similar agents stored or labeled improperly [s. 27]
Observation: Noted a spray bottle labeled as QUAT sanitizer holding peroxide multi surface cleaner and disinfectant.
Date to be corrected by: Immediately
Corrective Action(s): Discard the peroxide multi surface cleaner and disinfectant that is labeled for QUAT sanitizer and place this solution in the appropriate bottle - an empty bottle with the correct label was noted by the mop sink - use this bottle instead.
All chemicals must be properly name label to avoid confusion of content. In the event of an accident, the operator must be able to readily identify the content to look up the SDS for first-aid instructions.

Routine inspection conducted today:
Handwash stations (including the station in the patron's washroom) were accessible, equipped with hot and cold running water, liquid soap and paper towel.
Note: The handwash station by the 3-part sink was missing liquid soap at the time of inspection. The provider, Ecolab, has changed the dispenser type and the old container of solution was unable to fit into the new dispenser. Manager is aware and is able to provide liquid soap temporarily at that location until the new container arrives later today. Observed proper handwashing during the time of inspection and the facility has access to 2 other handwash stations within the serving/ cooking area.
All refrigeration units were at ≤ 4C.
All food products stored at least 6 inches off the floor.
All freezer units were at ≤ -18C.
All hot hold units were > 60C.
Temperature log completed on a daily basis.
200 PPM QUAT detected in the sanitizer spray bottles and sanitizer container available in the front and back of house prep areas. QUAT test strips available.
Note: Ecolab Peroxide Multi Surface Cleaner and Disinfectant was also noted in a spray bottle, however the operator does not have the sanitizer test strips available on-site to test the concentration of this chemical. Obtain test strips from the supplier.
Cleaned utensils and cutting boards were noted sanitary and stored in a sanitary manner.
All chemicals were stored away and below food and food contact items.
No signs of pest activities at the time of inspection.
