Observation (CORRECTED DURING INSPECTION): Potentially hazardous foods stored in prep cooler were >4C. Internal temperature of products were: Sliced ham 12.9C, Tuna salad 13.3C, Sliced cheese 14.4C, Mayonnaise 13.9C, Egg salad 13.7C, Sliced beef 15C. No temperature records present.
Corrective Action(s): -Operator was directed to discard all products noted above.

Observation (CORRECTED DURING INSPECTION): Cooked chicken (9 pieces) was being stored kept at room temperature. Internal temperature of the chicken was 21.3C to 25.7C. Operator reported product was cooked at 10:00am (3.5hrs prior), held at room temperature and reheated when ordered. This in unacceptable.
Corrective Action(s): Operator was directed to discard product. Potentially hazardous foods must be held at 60C or hotter after cooking or cooled fully (and rapidly) to 4C or colder.

Observation: -Prep cooler was not maintaining potentially hazardous food at 4C or colder. Temperature of the unit was 12C.
Corrective Action(s): -Repair or adjust cooler and do not store any food in the cooler until it is capable of maintaining a temperature of 4C or below. Retain service report/invoice from refrigeration technician to verify repair has been completed. [Correction date: 22-June-2018]

-General sanitation was satisfactory
-Handsinks in kitchen and staff/public washrooms supplied with hot/cold running water, liquid soap and paper towel
-Cooler temperatures were acceptable (with the exception of the line cooler noted in violation):
-Display cooler 2C
-Sliding door cooler (back) 4C
-"Dimchae" cooler 2C
-Fridge/freezer 2C/-11C
-Sliding door cooler (beverages) 4C
-Freezers were maintaining product in a frozen state. Temperatures were -18C to -25C
-Hot holding of soup and rice was >60C
-Dishwasher was functional and met sanitizing requirement. 50ppm chlorine was detected on dish after cycle
-Bleach sanitizer solution present in spray bottle. Concentration was >>200ppm. Concentration should be 100-200ppm chlorine. Solution was diluted to suitable level at the time of the inspection.
-No signs of pest activity noted at the time of the inspection.
***Raw chicken noted in freezer. Premises does not have an exhaust canopy therefore grease laden vapours must not be created. Products of raw animal origin must not be cooked in this premises. Discontinue this practice. Verify with the Burnaby Fire Dept which products are acceptable to be cooked in this space.
