Observation (CORRECTED DURING INSPECTION): A bucket of Quat sanitizer measured 0 ppm. Staff member indicated that the bucket was filled with the long hose at the dispenser.
Corrective Action(s): Discard the sanitizer in this bucket. Refill the bucket with fresh sanitizer using the short hose of the dispenser.

Observation: Cleaning agents dispenser is unable to dispense Quat sanitizer at 200 ppm through the long hose. Short hose for filling spray bottles appears to be functioning correctly (200 ppm Quat detected).
Corrective Action(s): Repair the dispenser so the long hose is able to dispense Quat sanitizer and other cleaning chemicals at the correct concentrations (200 ppm for Quat). Use the short hose until repairs have been made.

Comments

- Hand washing stations are equipped with hot and cold running water, liquid soap, and paper towels
- Coolers (walk-in, stand-up, undercounter, buffet) at < or = 4C. No foods stored at buffet table at the time. Ensure foods are maintained at 4C at the buffet table.
- Stand-up freezers at < or = -18C
- Hot holding units were not in use at the time of inspection. Ensure they are capable of maintaining food temperatures at 60C or greater.
- High temperature dishwasher is available. Final rinse temperature reached 77.8C at the plate level.
- 200 ppm Quat sanitizer available in spray bottles
- Food is covered and protected from contamination
- Ice machine is clean. Ice scoop is stored in a sanitary manner.
- Drink dispensing gun and holder is maintained
- Premise is well lit
- Permit is posted
- No signs of pests observed during inspection. Orkin provides monthly service. Reports will be sent to the health inspector.
