Observation (CORRECTED DURING INSPECTION): Quats dispenser is not in good working order as it is incapable of diluting the sanitizer at the 200ppm. According to staff, a service technician has been contacted to repair the unit. Until the dispenser is repair, staff are to manually dilute the quat sanitizer to a concentration of 200ppm and measured with quat test strips.

Observation: Cockroach activity noted on sticky traps placed in the following areas:
- underneath front hand washing station
- rolling rack by the front oven unit.
- underneath the 3-compartment sink.
Fruit fly activity noted in the pop station area in the back kitchen.
Pest control company was onsite to service the premises on Jan 10, 2019 (yesterday).
Operator is to have pest control company identify all pest entry points and have them properly sealed. Pest control company is to implement an integrated pest control management plan to rectify the pest problem. Thorough adequate daily cleaning is required help pest problem.

Routine inspection conducted and the following were noted at the time of inspection.
All cooler units at 4C.
Hot holding of food products in warmers were at least 60C.
Hand washing stations satisfactory.
All food items stored at least 6 inches off the ground.
Walk-in freezer at -18C.

Alteration to the front service is planned to take place in the up coming weeks. Health approval must be granted prior to any renovations. Operator is to submit floor plans to the health department for review and approval prior to any renovation activity.
