Observation (CORRECTED DURING INSPECTION): In-use utensils (rice scoop) stored in a room temperature water. In-use utensils now stored in a clean empty container and changed every 2 hours.

Observation (CORRECTED DURING INSPECTION): Back kitchen hand washing station was obstructed by storing a wok in the basin. The wok was removed at this time.

Observation (CORRECTED DURING INSPECTION): Observed single use plastic bowls being used as a dry ingredient scoop (e.g., tempura flour, etc.). Single use items are not meant to be washed and sanitized. Also, single use plastic containers can easily chip and break which can lead to physical contamination. Operator replaced single use bowls with adequate scoops.

Routine inspection conducted:
Hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towels.
General food storage practice is adequate.
All coolers measured at 4C or less.
All freezers at adequate temperature.
Hot holding measured at 60C or higher.
Food contact surface sanitizer measured at 200 ppm chlorine in the front and 50 ppm chlorine in the back kitchen.
Observed small amount of partially cooked tempura. Room temperature holding for 2 hours max.
No sign of recent pest activity noted at this time. Routine pest control services in place (weekly and bi-weekly).
