301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): Grill scraper/cleaner stored on lower shelf in amongst rodent droppings. CORRECTED DURING INSPECTION - Tongs sanitized immediately.
Lower shelves found to have rodent droppings on them. Specifically the lower shelf areas:
- Next to ice cream freezer unit. Dough mixer in this area with various equipment
- Where plastic wrap is stored
- Where potatoes are stored

Corrective Action(s): Ensure lower shelves are routinely cleaned. FHA recommends not using lower shelves unless absolutely necessary until such time as rodent infestation can be eliminated. Remove all dishes and equipment from lower shelves until rodent infestation is eliminated.
Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.
Discard plastic wrap, food or other items contaminated with rodent droppings. Sanitize that equipment that can be run through the dishwasher.

Observation (CORRECTED DURING INSPECTION): Soup in terrine being dispensed in area without hand sink for proper hand washing.
CORRECTED DURING INSPECTION - Soup terrine relocated to active food handling area adequately equipped with hand washing stations.
Some bags of dry goods opened but not in pest proof bins.

Corrective Action(s): Ensure food is not prepped or served in areas without hand sinks.
Ensure all dry goods are stored in pest proof containers. This is especially important during an active infestation.

Observation: Evidence of rodent infestation:
- Three dead mice observed in trap
- Rodent droppings found on lower shelves in various areas.

Corrective Action(s): Facility is aware of rodent infestation. Services from Pest Control Agency occur twice monthly at this point.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Two areas where door skirts/sweeps could be added to prevent entry of pests:
- Door sweep into dry storage area has hole from wear at one end.
- Main two swing doors into dining room lack door sweeps.

Corrective Action(s): These areas could allow entry of rodents into kitchen. Install door sweeps/skirts and ensure doors are closed and tightly sealed at end of night.
Examine facility for any additional entry points and have facility seal any other holes found at facility. Currently many holes have been sealed already. Ensure Pest technician or maintenance person are actively searching for any additional or new holes and seal with non-chewable materials as before.

Observation: Some cleaning required:
- Inside drawers
- Lower shelves where rodent droppings were located
- Floor of dry storage area where rodent droppings were located.

Corrective Action(s): Spray rodent droppings with 200ppm chlorine solution or equivalent. Remove droppings from area. Wet affected area with 200ppm chlorine or equivalent and soak area.

Observation: Dipper well is broken. Water is not able to continually flow during meal service.
Walls of walk in cooler unit have rust exposed.

Corrective Action(s): These two areas require repair:
- Repair dipper well such that water is able to freely flow
- Repaint or resurface the walls of the walk-in cooler unit. Rust should not be exposed as paint can chip and fall into food items.
Ensure these two areas are repaired.
