Routine Inspection:
Hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
All temperatures met health requirements:
- Coolers maintained at or below 4 degrees Celsius.
- Freezers maintained at or below -18 degrees Celsius.
- Hot holding maintained above 60 degrees Celsius.
General food storage practiced satisfactory:
- Food items covered.
- Food items stored off the floor.
Bleach sanitizer in spray bottle = 200 ppm.
High temperature dishwasher sanitizing with >71 degrees Celsius at dish level for final rinse cycle.

REMINDER:
- Ensure to cool foods in the following manner:
1. Cool from 60C to 20C in 2 hours using a cooling wand, ice water bath, or separating into smaller portions, then
2. Cool from 20C to 4C in the next 4 hours in the cooler at 4 degrees Celsius.
