Temperature Control:
- Freezer at -18C or below
- All coolers at 4C or below
- All units are equipped with thermometers

Sanitation and Maintenance:
- 3 compartment sink with approved sanitizer QUATS measured at 200ppm (test strips available)
- QUATS as surface sanitizer at 200ppm
- High temp dishwasher sanitizing at the final rinse (71C at plate)
- Walls and floors were clean and sanitized
- All food contact surfaces are in good working condition and easy to clean
- No signs of pest activity at the time of inspection
