Observation:
Accumulated food crumbs and flour found on equipment wheels, racks/pallets, exterior sides of equipment, and underneath the cooler and freezer units. This will attract pests.
Corrective Action(s):
Clean these hard-to-reach areas and increase the frequency at which they are done.

Comments

A routine inspection was conducted, the following observations were made:
- Cooler 4C; freezer -18C; thermometers present; and temperatures recorded daily.
- Time recording of savory items is being done. 6 hour holding time.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- 3-compartment sink method for dishwashing was being followed at time of inspection.
- Quats sanitizer was 200ppm.
- General sanitation is good, improvement needed in the mentioned area.
- No signs of pests. Abell Pest Company monitoring system in place.
- Foods stored in food grade containers; covered; labeled; date coded; stored in groups; and 6" off the floor on shelves or pallets.
- No expired foods in use or for sale. FIFO rules being followed.
- Multi-purpose rack, just outside of staff washroom, requires to be re-organized so that all clean and drying items are above foods and dirty items. Inform all staff and recommend placing signs on each shelf for their purposes.
