Observation (CORRECTED DURING INSPECTION): The following was observed:
1. Paper towel was not available at the following hand washing stations: Production area (paper towel stuck within dispenser), spice room, cutter room, packaging room.
2. Liquid soap was not available at the production area hand washing station (electronic soap dispenser not functional at time of inspection)
Corrective Action(s): Above-noted hand washing stations were supplied with paper towels at the time of inspection. A pump-type soap dispenser was provided for the production area hand washing station until the electronic soap dispenser is made functional. Ensure that at all times, all hand washing stations are supplied with warm running water, liquid hand soap, and single use paper towels to facilitate hand washing.

Comments

Routine inspection conducted:

- Coolers at 4 degrees C or less
- Production area at 10 degrees C or less
- Freezers at -18 degrees C or less
- It was stated that food equipment is washed, rinsed, and sanitized at the end of each day and between different animal species
- Three compartment sinks supplied with hot and cold running water and three sink plugs each
- Cleaning chemical and sanitizer dispensers available with hose attachments in processing areas. Sanitizer is dispensed from a centralized unit and was tested at 200 ppm quaternary ammonium compounds (quats)
- Spice room well organized. Dry products are stored in covered bins that are labeled.
- No gaps were observed at loading docks in receiving area. No signs of pest activity observed. Premises is serviced by a licensed pest control operator.
- It was stated that there are no changes to food operations, food safety plan, or sanitation plan.
- It was stated that temperatures are logged electronically with an alarm system in place if temperatures fall outside of required parameters.
