Observation (CORRECTED DURING INSPECTION): Coleslaw scoop was stored in the coleslaw, with the handle in direct contact with the coleslaw.
Corrective Action(s): Ensure scoops are stored in a sanitary manner to prevent potential contamination of foods. Scoop was removed at the time of inspection.

Comments

-Prep cooler was at 4C.
-Upright glass door cooler was at 4C.
-Upright metal 2-door cooler was at 4C.
-Upright metal 1-door cooler was at 4C.
-Chests freezers ranged from -11C to -16C.
-Hot holding of rice and gravy were greater than 60C.
-Cooked chicken is rapidly cooled in the freezer, prior to transferring to the cooler. Chicken made the previous night was at 4C.
-Cleaning and sanitizing carried out in the 3-compartment sink. Bleach was tested at 200ppm.
-Bleach sanitizer pails were labelled and tested at 200ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Ice machine was clean and well maintained.
-Raw meats stored separately from ready-to-eat foods.
-Washroom clean and well maintained. Handwash station supplied with hot and cold running water, liquid hand soap, and single use paper towels.
