- All hand sinks were equipped with liquid soap and paper towels
- Quat available at 200ppm from main dispenser at three compartment sink and in sanitizer buckets for soaking wiping cloths
- High-temperature dishwasher reached 79C at plate level on final rinse (minimum of 71C at plate level required)
- Walk-in cooler measured to be 3C
- Walk-in freezer temperature satisfactory
- Prep cooler inserts measured to be 4C
- all undercounter coolers measured to be between 2-4C
- Hot holding units for soups and cooked meat were all above 60C
- Food storage organized, protected from contamination, and labelled
- Ice machine interior was maintained in sanitary condition
- All scoops were stored separately from food/ingredients
- Pest-proof containers available for dry ingredients
