Observation: Sanitizer was not prepared at the time of inspection.
Corrective Action(s): Sanitizer must always be available when food handling is being done whether it is in spray bottle or in a bucket.
Operator is getting spray bottles to fill with sanitizer. Sanitizer dispenser dispensing QUAT sanitizer at 200ppm.

Observation: Box of samosas observed to left open in the walk in cooler. Samosas observed to be stored directly in the cardboard box. Box used to hold vegetables and now soaked up all the grease.
Corrective Action(s): Do not store ready to eat foods directly in used cardboard boxes. Food must be stored in food grade containers and stored covered.
