Observation: Significant fruit fly infestation remains in two key areas of premises - Dish pit and salad station.
Corrective Action(s): These populations must be eliminated or substantially reduced. Continue to improve the general daily clean up and dry up in noted areas. Make sure staff move equipment (including mouse traps) during scheduled cleaning (daily and other). Tile grout lines at wall floor interface continues to accumulate stagnant water.
Salad prep cooler may be contributing to the breeding potential as discussed. Observed water pooling along trough under and inside this unit. Investigate unit, eliminate water leak and clean both food accumulations and remaining water. This will be reviewed at follow up inspection date noted on report.

Adequate handwashing stations not available for employees [s. 21(4)] (Bar and Servery: Paper towels missing, soap dispenser located above to-go containers.
Kitchen: Existing handwash stations very dirty and not maintained adequately; functioning soap dispensers missing; unused hand sink acting as harbourage/breeding for fruit flies.)
Comments

Cooling temp controls improved at both prep coolers (lids or covering in place). Countertop sauces cooler empty.
Handwash stations improved - cleaned up, stocked and dispensing units in place/secured.
Sanitation improved in most stations - Dish pit is not good enough - selection of isolated spots in stations need more work.
**Continue to investigate systems and/or equipment that will allow the proper cleaning and sanitary maintenance of floor drains as discussed.
