Banquet hall not in use at the time of inspection.

Premise is sanitary.
Hot and cold water available.
Dedicated hand sinks with liquid soap and paper towels available.
Washrooms are sanitary with fully stocked hand sinks.
Food protected from contamination. Food is from an approved source.
Equipment in good working order.
Ice machine is sanitary with dedicated hand scoop.
Temperature holding is adequate and in use with accurate thermometers and logs.
3-compartment sink in use. Chlorine sanitizer available and in use at 200 ppm during service.
Dishwasher final rinse at 100 ppm chlorine at the plate.
Mop sink, backflow preventer in place - good.
Dining area is sanitary. Utensils and plates are stored in a clean manner.

Holding units:
Coolers at 4C and below. Chest freezer at -21.2C.
One walk in freezer at -5C in defrost cycle. Ensure this unit reach -18C after defrost cycle is complete.
Hot holding not in use at the time of inspection.
Chafer dishes are electric power and can reach above 60C for hot holding.
Food service in buffets are usually within one hour.

Recommendations: In the bar area, there are some fruit flies in the dump sink. Cleaning is required in this area to prevent fruit flies.
Inside of microwave requires minor cleaning before next food service day.
