Observation (CORRECTED DURING INSPECTION): Hot holding of chicken was at 54C. Hot holding cabinet has been increased since the previous inspection.
Corrective Action(s): Hot potentially hazardous foods must be stored at or above 60C to prevent the growth of pathogens and or the formation of toxins. Hot holding cabinet was increased to 160F and chicken was reheated to greater than 74C prior to hot holding.

Comments

-Follow-up inspection to April 26, 2022.
-Chemical dishwasher has been serviced. Technician has switched chlorine sanitizer pail from 20L pails to 4L pails to decrease the evaporation of chlorine, Chemical dishwasher had a final rinse of 100ppm chlorine on the dish surface during the final rinse (minimum of 50ppm required for proper sanitizing). Test chemical dishwasher daily to verify proper chlorine concentrations.
-Rice is no longer being reheated in the rice cooker.
-Chemicals were properly labelled to identify their contents. Ensure containers are relabelled as needed.
-General food storage practices were good at the time of inspection.
