Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1. Found plates up at the front to have food stuck to them.
2. Dishwasher had a final rinse of 0 ppm chlorine at time of inspection
3. Found spray bottles to have >400 ppm quat
4. Pop lines showed some build up in the lines, and the connector pieces were heavily soiled with syrup.
Correction: 1. Rewash all the plates up front along cook line to remove grease and food debris.
2. Make sure tube for chlorine is fully submerged in the liquid to prevent air bubbles forming. Dishwasher was checked in the morning, primed chlorine and was found to be 50ppm.
3. Ensure spray bottles are mixing properly to provide 200 ppm quat
4. Pop lines should be regularly clean to prevent build up in the lines.

- Quat sanitizer was 200 ppm
- Sink and surface sanitizer was 1875 ppm lactic acid
- Choose 1 sanitizer to use, do not need to sanitize surfaces with both Quats and SInk and Surface
- Pest control has been onsite to assist with fruit flies, continue to keep areas clean and free of water and food (i.e. bar and dry storage)
- Small ice machine is not in use, will be removed.
- Foods in the dry storage area were covered
- All items have been corrected.
