Comments

General:
- handwashing station stocked with soap, paper towels and hot and cold running water
- sanitizer measured 200ppm chlorine in spray bottle - ensure bottle is clearly labelled as similar bottle is used for vinegar ("bleach" label is fading)
- dishwasher dispensed 50ppm chlorine at final rinse cycle

- bread chest freezer: -12C
- prep cooler: 4C
- under counter freezer:-15C
- upright freezer: -17C
- walk-in cooler 3C
- fridge/freezer combo: 3C/-16C
- beer under counter cooler: 3C
- hot holding unit not on at time of inspection; operator stated rice in hot holding unit was to be discarded as it had been more than two hours
