Observation (CORRECTED DURING INSPECTION): Observed pre-cooked samasas were left at room temperature. When inquired staff stated that they were frozen; left at room temperature for storage and thawing. Samosas were mostly thawed and was at approximately 6 C. Education provided that thawing should not be done at room temperature but in a working cooler at 4 C or lower.
Corrective Action(s): Required operator to transfer all cold potentially hazardous products into a cooler at 4 C or lower. All potentially hazardous foods must be stored at 4 C or lower OR 60 C or higher. Staff transferred all products into a cooler at the time of inspection.

Observation (CORRECTED DURING INSPECTION): No sanitizer available at the time of inspection; QUAT sanitizer is not available. Bleach bottle available on site.
Corrective Action(s): Required operator to make sanitizers (100-200ppm of residual chlorine) at the start of the shift each day. Sanitizer was made at the time of inspection.
