307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19] Observation: The counter around the two compartment sink in the front area (beside ice machine) has been re-surfaced with a sheet of flooring that has been stapled to the old counter. This surface is not in a condition that will allow for easy cleaning. Corrective Action(s): All surfaces, including the counter and wall around the double sink in front service area, are to be smooth, impervious to moisture, and in good condition so that they can be cleaned. Correct by March 15, 2020 or earlier. Violation Score: 9

Large 2 door cooler and milk cooler are at 4 C or colder. New display cooler is at 4-5C - adjust and monitor so that food is kept at 4 C or colder (2-4 C). Sandwich prep cooler - air temperature is at 13 C. Use only for ketchup, mustard, pickles, and other non-potentially hazardous or lower risk foods. All meat, cheese, dairy, cooked vegetables are to be stored in the large cooler at 4 C or colder. Cheese moved to alternate cooler. Hot holding soups - 60 C - good. Hand washing sinks have liquid soap and paper towels. Dishwasher has a final sanitizing rinse cycle - water temperature was 188F at the gauge and >160 measured inside of the machine - good. Chlorine sanitizer is being used for wiping cloths and counters - use 1 tsp bleach in 1 litre water.
