Sandwich prep cooler - air temperature is at 13 C. Use only for ketchup, mustard, pickles, and other non-potentially hazardous or lower risk foods. All meat, cheese, dairy, cooked vegetables are to be stored in the large cooler at 4 C or colder. Cheese moved to alternate cooler.
Hot holding soups - 60 C - good.
Hand washing sinks have liquid soap and paper towels.
Dishwasher has a final sanitizing rinse cycle - water temperature was 188F at the gauge and >160 measured inside of the machine - good.
Chlorine sanitizer is being used for wiping cloths and counters - use 1 tsp bleach in 1 litre water. |
