304 - Premises not free of pests [s. 26(a)]
Observation: 1) Multiple cockroaches in various stages of growth observed in one area of facility encompassing the mixing area, laundry room, dishwashing and adjacent mixing room. The highest concentration noted in the mixing room where several live ones were observed along white insulating cap around pipes running along ceiling approximately 12' up off the ground. Contract with pest control company in place.
2) Several mouse droppings noted at end cap of dry storage area nearest shipping/receiving areas
3) Gap observed under shipping bay door nearest garbage bin where two door sweeps meet.
Corrective Action(s): 1) Contact pest control company, have them do a thorough inspection as soon as possible and provide recommendations/create a plan to eradicate cockroaches. Follow all recommendations provided by pest control company. Staff indicated next scheduled routine inspection for pest control is tomorrow.
2) Clean up mouse droppings, notify pest control company at next service and monitor for continued activity
3) Close gap in door sweep under bay door.

General observations:
- Facility SQF level 2 certified
√ Cooler used only for quality control, not food safety purposes. Temperature recorded daily.
√ Food up off floor ≥6”, good stock rotation noted, all product labelled with product name, lot code and dates
√ Hand wash stations fully stocked with hot and cold running water, liquid soap and paper towel
√ Peroxide based sanitizer used for food contact surfaces as well as floors/drains/etc
√ High temperature dishwasher sanitizing at ≥71°C
√ Dry quat sanitizer used for shoes at entry into production area
√ Three compartment sinks stocked with surfactant, sanitizer, hot/cold running water and drain plugs
√ Equipment appeared to be in good working order
√ General sanitation and maintenance is very good
√ Thermometers and monitoring equipment in place
√ Temperature/sanitation/logs maintained and no issues with equipment have been noted
