Comments

Handsinks were supplied with liquid soap, hot and cold running water, and paper towels/air driers.

Walk-in-cooler and other coolers were at or below 4 degrees C / 40 degrees F.
Walk-in-freezer temperature was satisfactory.
Hot-held foods were 60 degrees C / 140 degrees F or hotter.
Time stamp was in place for the condiments.
Eggs are kept at room temperature for 30 minutes maximum according to the Manager.
Only one tray of eggs was out at room temperature during a busy rush. The other eggs were stored in the cooler at or below 4 degrees C.
Temperature records were being maintained.

Dishwasher final rinse chlorine residual was at least 50 ppm at the plate.
100 ppm chlorine sanitizer was available in the buckets.
200 ppm QUATS sanitizer was available from the dispenser.
Ice machines were in a clean condition and the scoop was stored separately.
A pest control program via Ecolab was in place.
Manager and supervisors had FOODSAFE training. It was discussed that FOODSAFE certificates issued prior to July 29, 2013 will expire July 29, 2018. The operator/person in charge and at least one staff member in their absence must maintain valid FOODSAFE training. Refer to www.FOODSAFE.ca for details.
