3 (of 6) Vulcan hot holding units in use at time of inspection All 3 keeping product at 60C or above. Staff had indicated last inspection that it was not properly preheated prior to use. This may explain why numerous inspections have found improper hot holding, however it does not make it any less dangerous. You have the means to do regular temperature checks on your high risk product - do it! Management must supervise staff and/or go over training procedures to prevent this from occurring again Spray bottles have been labeled as requested. Quat sanitizer tested in 2 spray bottles found at 200ppm. Good No movement of the paper towel dispenser has occurred. Access remains tight.
