Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Meat slicer used yesterday and cleaned after appear to have food debris and some grease under guard and blade. Repeat. Grease buildup around panini grill. Bleach sanitizer in bucket in kitchen was measured at 0ppm.
Correction: Meat slicer unit must be taken apart everytime it is being cleaned so that all food debris is properly removed. Clean panini grill. 100ppm bleach sanitizer is required to have effect. 1 tsp bleach to 1 litre as demonstrated. Obtain test strips to verify.

More cleaning to be done between fryer and grill as indicated to kitchen staff.
