Comments

-Note: the operator intends to add a hot holding unit to the front area to display foods. Ensure that foods are kept > 60 C and that a working thermometer is kept inside the hot holding unit. All coolers were < 4 C. All freezers were < -18 C. No evidence of pests. The dishwasher had 100 ppm chlorine. Bleach sanitizer solution was at 100 ppm. Hand sinks supplied with hot and cold water, soap and paper towels. General sanitation was satisfactory.
