Observation:
The two handwashing sinks in the cutting room are not operational as the no hot and cold running water exits the faucets. The automatic sensor to turn the water on is not operating as the battery packs are rusty. Staff are using the staff washroom sink or the 2-comp. sink (in the cutting room) to wash hands. This is NOT acceptable as staff will touch dirty bathroom door handles or plastic curtains to enter the cutting room after washing hands.
Corrective Action(s):
Immediately repair or replace the battery packs for the hand sinks so running hot and cold water exits the faucet at all times.

Observation:
Found cardboard tapped to a table as a barrier, and duct tape used to secure wires on a packing machine. Cardboard and duct tape are not acceptable materials as they are not food grade, durable, smooth, sealed, impervious to water or cleanable.
Corrective Action(s):
Remove these materials and discontinue their uses. Repair or install materials that meet health standards (stainless steel, glass, hard plastic) and ensure they are sealed and cleanable.

Observation:
There is white peeling/chipped paint on the ceiling of the cutting room and on other walls or door frames. Paint chips could fall into food and contaminate it.
Corrective Action(s):
Sand and repaint all surfaces (ceiling, walls, door frames, etc.) that have chipped and peeling.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers below 4C; freezers below -18C; thermometers present; and temperatures recorded daily.
- All foods stored 6" off the floor on shelves, racks, or pallets.
- General sanitation is good. No signs of pests, Abell services every second month.
- High temperature dishwasher was 71C at the plate's surface, as per max/min thermometer. Monitor the dishwasher's rinse temperature (above 180F), time and pressure. Purchase a waterproof dishwasher that records the maximum temperature reached.
- Sanitizer spray used, chlorine based.
- No expired products found.
- Food store and processing area found at this location.
