Routine check.
Large walk in cooler and prep cooler - temperatures below 4C/40F - good.
Walk in cooler cold even with door opening and closing - good.
Temperature records are being kept.
Cooked food - staff advise that each pan of cooked chicken is temperature checked to above 74C/ 165F.
Probe thermometer available.
Cooling hot food on shallow trays. Carts for tray storage used in walk in cooler.
No hot holding during inspection.
No defrosting during inspection.
No menu items with raw eggs or raw seafood.
Food from approved sources.
Director of Food Services on site and has a valid Food Safety training certificate.
Hand washing sinks (x3) have hot/cold water, liquid soap and paper towels in dispensers.
Nitrile and other non-latex (vinyl) disposable gloves are also used by food handlers.
Wiping cloths for sanitizing counters and work surfaces stored in a sanitizing solution (about 200ppm quats sanitizer detected using test strip - good).
Sanitizing solution is changed every 2 hours.
Commercial dishwasher shows 150F on wash water gauge, 180 F on rinse water gauge (final sanitizing rinse).
Temperature measured inside of the machine reached 160F/71C using test strip - good.
Temperature records are being kept for dishwasher. Staff to let dishwasher warm up to temperature before use.
Organization (walk in cooler and dry storage) - good.
No obvious signs of pests. Kitchen is on 4th floor.
