Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher 0ppm chlorine during the final rinse cycle.
Corrective Action(s): Staff instructed to manually warewash until the low temperature dishwasher is serviced. Wash, rinse, sanitize in 200ppm quats for 2 minutes then air dry.

Observation: Ambient air temperature of wall mounted freezer by the deep fryers ~ -1 to 0 degrees C. Gasket seal observed to be damaged.
Corrective Action(s): Staff aware of damaged gasket seal and has placed an order for a replacement. Service the wall mounted freezer and ensure it is capable of maintaining -18 degrees C or less. Correct immediately.

- Low temperature dishwasher 0ppm chlorine during the final rinse cycle. Leak observed in/around the sanitizer dispenser.
Corrective Action(s):
- Staff aware of damaged gasket seal and has placed an order for a replacement. Service the wall mounted freezer and ensure it is capable of maintaining -18 degrees C or less. Correct immediately.
- Service the low temperature dishwasher ane ensure it dispensing at least 50ppm chlorine during the final rinse cycle. Ensure all dishes/utensils/equipment are sanitized after use. Verify chlorine concentration during final rinse cycle with available test strips.

200ppm quats dispensed from chemical dispensing station. 3 compartment sink setup for manual warewashing.
General sanitation is satisfactory. Pest control services in place.
